Boca Burger with Coleslaw and Mashed potatoes



Tonight it was good old "American" food! A vegan Boca burger on toasted white wheat toast (we forgot to get buns) with sliced tomatoes, onions, green peppers, and pickled jalepenos. On the side was homemade mashed potatoes and my mom's coleslaw (not the type with mayonase). Everything is vegan and homemade (except the burger and bread).

Mashed potatoes:
4 potatoes
1 stick of earth balance "butter"
garlic powder, salt, and pepper to taste

First skin and quarter the potatoes and boil them until they are soft.
Once they are soft, strain, and use a ricer (or other device) to mash the potatoes.
Then melt the "butter" and stir into the mashed potatoes
Add the garlic powder, salt, and pepper to taste.

Coleslaw:
1 head of cabbage
3 carrots (or 12 baby carrots)
1 onion
4 cloves of garlic
For the coleslaw marinade:
2 cups of white vinegar
1 cup of sugar
2 1/2 cups of oil
2 tsp. salt
1/2 tsp. pepper

Chop up the cabbage, carrots, onion, and garlic (I used the ChopChop, or the Cuisinart works well too) and put aside in a bowl.
Combine the ingreadiants for the marinade in a saucepan and heat until almost at a boil, stir so the sugar doesn't stick to the bottom.
Pour mixture over vegtables in the bowl and then refridgerate.
